Annie's Brown Stew
Ingredients
Atholl Glens organic beef braising steak
a slash of red wine/or beer
Shallots olive oil
salt and freshly ground black pepper
finely diced carrot
cornflour beef stock
Peel the shallots and fry in oil, brown the meat with the shallots, season,add liquids, then carrot simmer till meat tender-couple of hours. Thicken liquid with cornflour.
Ribbons of leek, parsnip and carrot would be nice served with the above.
A plain pasta or mashed / baked / boiled potatoes.
