
Ingredients
1 teaspoon of olive oil
1 onion, roughly chopped
1kg diced mutton
10 dried apricots, halved
2/3rds pint of lamb stock
1/2 cup of balsamic vinegar
Sprig of rosemary
2 bay leaves
Sprig of thyme
2 cloves of garlic, finely chopped
Ground pepper
Put the olive oil, chopped onion and garlic in a large, heavy-bottomed casserole dish. Add all the mutton and all the rest of the ingredients.
Bring to the boil, then reduce the heat and simmer gently for 3 hours.
Serve with mashed potatoes or rice.
