Chicken and Spinach Lasagne
Ingredients (serves 4)
Leftovers of a roast chicken
3 large handfuls of spinach
12 button mushrooms
White sauce - 1 large jar (or make your own if you prefer)
Lasagne sheets
Cheddar cheese to finish
Method:
1. Preheat the oven to 200 degrees centigrade.
2. Pick the chicken carcass clean, and chop all the meat. Include skin too if you wish, or for a healthier option discard it.
3. Mix the chicken and white sauce together in a bowl, saving a little sauce to one side. If you prefer, make your own white sauce, but to be honest it's easier and just as tasty to use a shop-bought sauce!
4. If using mushrooms, add them to the mixture too.
5. Spread a layer of the mixture in a lasagne dish.
6. Cover with a layer of spinach leaves.
7. Add a layer of lasagne sheets (use the kind that do not need pre-cooking).
8. Repeat the layers again, and top with the remaining white sauce.
9. Grate cheese over the top, and bake for 40 minutes.
Serve with garlic bread and a green salad.
