Cooking a steak just how you like it is a skill that takes practise and judgement, but this guide to grilling / frying times should help you get started.
Rump, Sirloin and Rib Eye
Rare = 2.5 minutes each side
Medium = 4 minutes each side
Well Done = 6 minutes each side
Fillet
Rare = 3-4 minutes each side
Medium = 4-5 minutes each side
Well Done = 6-7 minutes each side

Best flash-fried at high temperature
Remember to rest steaks for a few minutes before serving - put them on a plate at room temperature, and cover loosely with foil. Resting allows the juices to be absorbed back in to the meat, giving you a juicier steak.
