Ingredients (serves 2)
250g minute steaks, sliced into thin strips
3tbs cornflour
Olive oil
Broccoli florets, sliced
2 cloves garlic, sliced
5cm piece of ginger, finely chopped
1tsp dried chilli flakes
60ml soy sauce, mixed with 5tbs sugar
Juice of 2 limes
1/2 a bunch spring onions, sliced diagonally
Lime wedges to garnish
Toss the steak strips with the cornflour. Heat a 5cm depth of olive oil in a wok until very hot, then fry the steak in batches until dark and crisp. Drain.
Pour off most of the oil from the wok, and stir fry the the broccoli, garlic, ginger and chilli for one minute. Tip in the sweetened soy sauce and lime juice and cook for a further 2 minutes. Toss in the beef and spring onions and serve.
