Ingredients
4 Loin of Lamb Chops
Salt and freshly ground black pepper
15 grms. Butter
1 tablespoon finely chopped mint
2/3 tablespoons honey
Half teaspoon finely grated lemon rind
Lemon slices to garnish
Trim lamb and season lightly. Place in grill pan and dot with butter. Cook under moderate grill 5-8 mins., until well browned. Turn the chops over and continue cooking for 2/3 mins.
Mix together the mint,honey and lemon rind and spread over chops. Continue to cokk for 5/8 minutes until well browned and cooked through.Serve with the pan juices spooned over and garnish with lemon slices and sprigs of fresh mint/parsley.
Serve the above recipe with creamy mashed potatoes to which you could add chopped spring onions and a good crunchy green cabbage, finely shredded and quickly steamed or boiled for a short time.
