Whilst some people prefer their barbeque meats plain, a marinade can bring a whole new flavour to the occassion.
The easiest way to marinade is simply to combine all the ingredients in a sealable food / freezer bag, add the meat to be marinaded, and shake to mix. Alternatively, you can marinade the meat in a shallow dish and cover with cling film. Once the meat is coated, leave it in the fridge for anything from 20 minutes to overnight, depending how much time you have! The longer you leave it, the stronger the flavour will be.
Great for minute steaks, or try it on kebabs:
160ml soy sauce
25ml medium dry sherry
1 tbsp fresh ginger
1 large clove garlic, crushed
Ideal for minute steaks:
6 tbsp extra virgin olive oil
3 tbsp red wine vinegar
1 tbsp balsamic vinegar
1 tsp finely chopped fresh rosemary
1 tsp crushed garlic
1/2 tsp kosher salt
Freshly ground black pepper
Great for lamb:
Juice and zest of 1 lemon
Juice and zest of 2 limes
1 tbsp clear honey
1 tbsp olive oil
1 tsp ground coriander
1 tsp paprika
1 tsp ground cumin
1 tbsp chopped fresh mint
A perfect match for our lamb chops:
80ml olive oil
1 lemon, thinly sliced
6 sprigs rosemary
4 cloves garlic, finely chopped
1/2 tsp salt
