Mutton, recognised as the meat from a sheep over two years old, was once the staple meat of many Britons. Having endured a period of unpopularity, the delicious, wholesome meat is now enjoying a huge revival, with the backing of Prince Charles and celebrity chefs such as Hugh Fearnley-Whittingstall and Gordon Ramsay. Atholl Glens' mutton comes from Scottish Blackface ewes, renowned for their tenderness and full flavour, who have been allowed to mature on the rich pastures and heather hills of Atholl Estates. The meat is matured on the bone for at least two weeks prior to butchering, developing the flavour and keeping the meat wonderfully succulent.
Our mutton is produced in small batches as ewes become ready for slaughter and to keep the meat as fresh as possible. Your box will normally be despatched within a few days of order, but during peak demand periods there may be a two week delay.
